Sweet´n spicy Khara Biscuits from South India:
Preheat oven to 350F. Roll out the dough and use cookie cutter to make 20 to 25 cookies. Prick the Biskuits with a fork before baking. Bake for 10 minutes. Lower oven temperature to 325F and bake for another 10 minutes until golden. Enjoy with a slice of sharp cheddar.
4T sugar
1/3c butter, softened
3-4T yoghurt
2c flour
1t salt
4-5T chopped curry leaves
3T chopped cilantro
5-6 Thai bird chillies, chopped
Pulse sugar in food processor several times. Add softened butter and cream till fluffy. Add the yoghurt, mix. Sift in the flour and salt. Stir in the chopped greens and chillies. Stir and mix with fingers until evenly mixed and a dough forms, adding a bit more yoghurt if necessary to bind the dough. Roll into a ball and allow to rest 10-15 minutes.
